Cooking with Melissa: “Dinner Is Served…The Heart Healthy Way”

Presented by: Melissa Gallagher-Cashman, CTRS, CDP, CADDCT, CMDCP, NASM-CPT

Join Recreational Therapist Melissa Gallagher-Cashman for a 4-part virtual cooking class series! Melissa will show you how heart-healthy ingredients can be both delicious and easy to make! You will practice mindfulness, heighten your senses, and recall memories. In this class you will make peach and spinach salad, and garlic chicken and vegetables. Grab your measuring spoons and spatulas and join AFA for “Cooking with Melissa”!

List of Supplies:

Peach & Spinach Salad
6 cups of fresh baby spinach
2 tablespoons of white wine vinegar
1 tablespoon olive oil
1 tablespoon finely chopped shallot (or onion)
2 teaspoons water
1/8 teaspoon salt
1 medium peach, pitted or 1 apple, cored and thinly sliced
3 tablespoons crumbled reduced-fat feta cheese
1 tablespoon pine nuts, toasted

Garlic Chicken and Vegetable Sheet Pan
3 halves boneless chicken breast
2 cups of broccoli
1 cup baby potatoes, quartered
1 cup cherry tomatoes
¼ cup chopped shallots
4 cloves garlic
1 teaspoon salt
1 teaspoon ground black pepper
¼ cup fresh rosemary chopped or 4 teaspoons dried rosemary
¼ cup fresh grated parmesan cheese

Knives for chopping
Cutting Board
Non-stick aluminum baking pan
