Cooking with Melissa: Let’s Do Lunch: Lunchtime Favorites the Heart-Healthy Way

Join Recreational Therapist Melissa Gallagher-Cashman for a 4-part virtual cooking class series! Melissa will show you how heart-healthy ingredients can be both delicious and easy to make! You will practice mindfulness, heighten your senses, and recall past memories. In this class you will make a veggie and hummus sandwich and tomato soup. Grab your measuring spoons and join AFA for “Cooking with Melissa”!

List of ingredients:

Veggie & Hummus Sandwich
2 slices whole-grain bread
3 tablespoons hummus
¼ avocado, mashed
½ cup mixed salad greens
¼ cup medium red bell pepper, sliced (or pimento)
¼ cup sliced cucumber
¼ cup shredded carrot

Creamy Tomato Soup
¾ cup no-salt added canned tomato puree
¼ cup low-sodium chicken broth
1 tablespoon reduced-fat cream cheese
